Beat eggs, cream, sugar and salt lightly in medium-sized
bowl. Melt butter in 9" skillet over medium high heat, tilting pan to coat
bottom and sides. Pour egg mixture into pan. Cook, lifting edges of set
mixture to allow uncooked egg to flow to bottom of pan. Continue to cook
until omelet is set, but top is slightly moist. Layer mango over top of
omelet and cook 30 seconds. Fold like an envelope and slide onto serving
platter.

FRENCH TOAST WITH MANGOS

2 eggs separated
1 tsp. vanilla extract
1 1/2 cups soft bread crumbs
8 thick slices French bread
4-6 tbsp. butter
2 cups chopped mango
1 cup sour cream
1/4 cup brown sugar
1/8 tsp. cinnamon
1 cup cream
Directions
Beat cream, egg yolks and vanilla until blended. Beat egg
whites and a dash of salt until frothy. Spread bread crumbs in a jelly
roll pan. Dip bread slices in yolk mixture about 10 seconds on each side,
then dip in egg whites and coat with bread crumbs. Saute in butter until
golden. Keep warm. Combine mango, sour cream, sugar and cinnamon. Serve
over French toast.

Toss together equal portions of cubed mangos, fresh

1 banana, split
3 scoops cottage cheese
1 mango, peeled and sliced
6 slices papaya
1 tbsp. granola
3 oz. cream cheese
1 tbsp. lime juice
3 tbsp. honey
3/4 cup whipped heavy cream
Directions
Place 3 scoops of creamed cottage cheese on banana halves
sliced lengthwise. Top with mango and papaya slices. Sprinkle with 1 tbsp.
granola. Serve with dressing by blending 3 oz. cream cheese, 1 tbsp. lime
juice, 3 tbsp. honey and 3/4 cup whipped heavy
cream.
