 MANGO SALSA

 

           
Recipe-I
Ingredients
1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup)
1/2 medium red onion, finely chopped
1 JalapeƱo chile, minced (include ribs and seeds for a hotter taste if desired)
1 small cucumber, peeled and diced (about 1 cup)
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice
Directions Combine all of the ingredients in a bowl. Season to taste with salt and pepper. If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.

Ingredients
 

1 cups ripe seeded tomatoes, coarsely chopped

1 cups mango, diced

1/2 cup finely diced cilantro

1/2 cup red onion, finely diced

1 tsp garlic powder

1/2 teaspoon of salt (use more if needed)

1/2 teaspoon black pepper

1 serrano chili, seeded and veins removed, finely diced

 
Directions Mix all ingredients and refrigerate overnight to enhance flavors. Serve with tortilla chips or on top of carnitas.

Ingredients
 

1 mango - peeled, seeded and chopped

1/4 cup finely chopped red bell pepper

1 green onion, chopped

2 tablespoons chopped cilantro

1 fresh jalapeno chile pepper, finely chopped

2 tablespoons lime juice

1 tablespoon lemon juice

 
Directions In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice and lemon juice.
