1 clove garlic
2 tbsp. lime juice
1/2 tsp. ground coriander seed

Directions
In a food processor,process garlic, shallots
and ginger. Add mango and puree 30 seconds. Add lime juice,
coriander seed, salt and pepper.Then process, adding oil in a
thin stream while processor is running.

3 tbsp. sugar
3 tbsp. water
2 tbsp.orange liqueur
2 mangos, chopped
Directions
In a small saucepan, combine sugar and water. Cook over
medium heat for 2 minutes or until sugar is dissolved. In food processor
or blender, process sugar syrup, mangos and liqueur until smooth. Transfer
to covered container and refrigerate up to 3 days. Serve over ice cream or
sorbet.

1 cup chopped red bell pepper
1 tbsp. oil
3/4 cup fresh mangos, peeled & cubed
1 cup mango nectar
1 tbsp. fresh ginger, minced
2 tsp. balsamic vinegar
1/4 tsp.crushed red pepper flakes
1 tbsp. flour

Saute onions and red bell pepper over medium heat for 5-8 minutes until soft. Stir in flour. Add mango, mango nectar, ginger, vinegar and red pepper flakes. Cook, stirring over medium heat until sauce boils and is thickened. Serve hot over chicken, fish or pork.

1/3 cup sugar

1 tbsp. cornstarch
1 tsp. grated lemon peel

In 2 qt. glass measure, combine cranberries, mangos and
sugar. Cover loosely with wax paper and cook in microwave on high for 8
minutes, stirring once. Combine cornstarch and water and stir into
cran-mango mixture. Add lemon peel and mix well. Microwave on high for 2
more minutes or until thick.

1 can (28oz) peeled plum tomatoes, crushed, with juices

1/4 tsp. ground allspice
1/4 tsp. ground cloves
1/4 tsp. salt
1/2 tsp. grated ginger
1 tsp. grated lemon peel
2 tbsp. minced onion
1/4 cup lemon juice
2 cups mangos, peeled and chopped
1/2 cup honey
Directions
Combine all ingredients in a saucepan. Bring to a boil over
medium heat. Reduce heat and simmer until mangos are completely cooked,
about 15 minutes. Puree mixture then return to saucepan and simmer 5
minutes. Serve with duck, chicken or lamb.

MANGO-CUCUMBER SALSA

1 cucumber, peeled, seeded, and diced
1/2 pablano chili, seeded, and finely diced
1 jalapeno chili, seeded, and minced
2 tsps. minced fresh ginger
1/4 cup chopped fresh mint or cilantro leaves
1 tbsp. packed light brown sugar, or to taste
1/4 cup fresh lime juice
salt and freshly ground pepper to taste
2 cups diced ripe mango
Directions
Cucumber adds crunch to this summer mango salsa. When
peeling the cucumber, I like to leave a few strips of dark green skin in
place for extra color. If you are leaving the skin on, wash the cucumber
with hot water to remove any wax coating. It is great on top of Swordfish.
