Recipe-I GREEN MANGO SAUCE
Servings
Ingredients
1 cup sugar
1 cup water
3 cups green mango slices
Directions Combine mango slices with sugar and water in saucepan. Cook over medium heat until it has the consistency of applesauce.

Recipe-II MANGO MARINADE
Servings 2 cups
Ingredients
  4 shallots
  2" piece peeled ginger
  1 clove garlic
  2 tbsp. lime juice
  1/2 tsp. ground coriander seed
  1/4 tsp. salt
  1/8 tsp. pepper
  1/3 cup olive oil
  1 medium mango, chopped
Directions In a food processor,process garlic, shallots and ginger. Add mango and puree 30 seconds. Add lime juice, coriander seed, salt and pepper.Then process, adding oil in a thin stream while processor is running.
   
Recipe-III ORANGE LIQUEUR MANGO SAUCE
Servings 1 cup
Ingredients
3 tbsp. sugar
3 tbsp. water
2 tbsp.orange liqueur
2 mangos, chopped
Directions In a small saucepan, combine sugar and water. Cook over medium heat for 2 minutes or until sugar is dissolved. In food processor or blender, process sugar syrup, mangos and liqueur until smooth. Transfer to covered container and refrigerate up to 3 days. Serve over ice cream or sorbet.
 
Recipe-IV MANGO JALAPENO SALSA

Ingredients
2 firm ripe mangos
Directions Peel mangos and chop coarsely. Combine with other ingredients and serve immediately.
 
Recipe-V RED PEPPER MANGO ONION SAUCE
Servings 6
Ingredients
1 1/4 cups chopped onion
1 cup chopped red bell pepper
1 tbsp. oil
3/4 cup fresh mangos, peeled & cubed
1 cup mango nectar
1 tbsp. fresh ginger, minced
2 tsp. balsamic vinegar
1/4 tsp.crushed red pepper flakes
1 tbsp. flour
Directions Saute onions and red bell pepper over medium heat for 5-8 minutes until soft. Stir in flour. Add mango, mango nectar, ginger, vinegar and red pepper flakes. Cook, stirring over medium heat until sauce boils and is thickened. Serve hot over chicken, fish or pork. ~National Onion Association
   
Recipe-VI SPICED MANGO SAUCE

Ingredients
1 tsp. curry powder
2 slices ginger, minced
1/2 cup water
4 mangos, chopped
Directions Mix all ingredients together and cook over low heat until mango is soft, approximately 20 minutes. Stir occasionally. Serve hot or cold.
   
Recipe-VII CRAN-MANGO SAUCE
Servings 2 cups
Ingredients
1 cup chopped mango
1 1/2 cups cranberries
1/3 cup sugar
1 tbsp. water
1 tbsp. cornstarch
1 tsp. grated lemon peel
Directions In 2 qt. glass measure, combine cranberries, mangos and sugar. Cover loosely with wax paper and cook in microwave on high for 8 minutes, stirring once. Combine cornstarch and water and stir into cran-mango mixture. Add lemon peel and mix well. Microwave on high for 2 more minutes or until thick.
   
Recipe-VIII MANGO BARBECUE SAUCE (with a bite!)

Ingredients
1 cup mango chutney
1 cup onion, finely chopped
1 tbsp. minced garlic
1 can (28oz) peeled plum tomatoes, crushed, with juices
2 tbsp. cider vinegar
1 tbsp. molasses
1 tsp. Tobasco sauce
1 ripe mango, cubed
Directions Combine all ingredients in heavy saucepan. Simmer covered on low heat for 20 minutes or until sauce thickens. Cool slightly. Puree sauce in food processor. ~Louise Ventura, Kihei, Hawaii USA. -via the internet
   
Recipe-IX HONEY MANGO SAUCE
Servings 1 1/2 CUPS
Ingredients
pepper to taste
1/4 tsp. ground allspice
1/4 tsp. ground cloves
1/4 tsp. salt
1/2 tsp. grated ginger
1 tsp. grated lemon peel
2 tbsp. minced onion
1/4 cup lemon juice
2 cups mangos, peeled and chopped
1/2 cup honey
Directions Combine all ingredients in a saucepan. Bring to a boil over medium heat. Reduce heat and simmer until mangos are completely cooked, about 15 minutes. Puree mixture then return to saucepan and simmer 5 minutes. Serve with duck, chicken or lamb.
   
Recipe-X HOT MANGO SAUCE
Servings 8
Ingredients
1/4 tsp. hot paprika
1/2 tsp. onion powder
1 clove garlic, crushed
1/2 tsp. grated ginger
1/4 tsp. pepper
1/2 cup jalapeno jelly
1/2 cup mango jam
1/2 cup oil
1/2 cup soy sauce
2 cups ketchup
Directions Combine all ingredients to make sauce. Brush on pork or chicken while cooking.
   
Recipe-XI MANGO-CUCUMBER SALSA
Servings
Ingredients
1 cucumber, peeled, seeded, and diced
1/2 pablano chili, seeded, and finely diced
1 jalapeno chili, seeded, and minced
2 tsps. minced fresh ginger
1/4 cup chopped fresh mint or cilantro leaves
1 tbsp. packed light brown sugar, or to taste
1/4 cup fresh lime juice
salt and freshly ground pepper to taste
2 cups diced ripe mango
Directions Cucumber adds crunch to this summer mango salsa. When peeling the cucumber, I like to leave a few strips of dark green skin in place for extra color. If you are leaving the skin on, wash the cucumber with hot water to remove any wax coating.
